Now, let me show you the exact way I do am

Step 1: Prep the Shrimp

First, you need to prep the shrimp

Get about 200g to 350g of fresh shrimp 

Peel am

Devein am

Pat am dry

Now chop the shrimp

Some people use food processor

But I prefer to chop by hand

You get better control of the texture

Chop some fine

Leave some chunky

The fine pieces go bind the filling

Step 2: Prep the Vegetables

Then squeeze out the water

Stir vigorously for a few minutes

If e too wet, add a bit of cornstarch 

Cover the bowl

Put am in the fridge

Let am chill for about 15 to 20 minutes

Step 4: Make the Wrappers (Optional)

If you dey make your own wrappers

You need wheat starch and tapioca starch

About 1 cup wheat starch

Half cup tapioca starch 

Mix together

Add salt

Boil water

Not hot water

Boiling water

Really boiling 

Pour the boiling water into the flour mixture

Stir quickly

The water go gelatinize the starch

When e cool down a bit

Add some oil or lard 

Knead the dough until smooth

The dough should be soft and pliable

If e too dry, add a bit more water

If e too wet, add a bit more starch

Cover the dough with a damp cloth

Let it rest for 20 minutes

Roll each piece into a ball
