So you want the chocolate ice cream recipe abi?
Look. I’m tired right now. Just finished washing pots from a small catering I did today. But let me talk to you.
First thing.
That little mug – the Dash one – must freeze overnight. Not for two hours. Not for “I’ll rush it”. Overnight. If you hear any water moving when you shake it, it’s not ready. Put it back inside.
I made that mistake my first time. Froze it for like four hours. I was so confident. Poured my mixture. Machine was spinning. Nothing happened. Just cold chocolate water. My children were looking at me like “Mummy this one is not ice cream o”. I was so embarrassed.
So don’t be like me. Freeze it well.

Now ingredients.
Half cup of milk. Use whole milk please. If you use that thin milk, your ice cream will taste like chocolate water. I’m not saying you’ll die. I’m saying don’t complain.
Quarter cup of sugar. Normal white sugar. Not honey. Not brown sugar. Those things freeze different. Your machine will be spinning for one hour and nothing will happen.
Two tablespoons of cocoa. The unsweetened one. If you buy the sweet one by mistake – the one they sell for hot chocolate – then reduce your sugar. Add maybe two tablespoons of sugar instead of quarter cup. Taste your mixture before you pour. You can always add sweet. You cannot remove it.
Half cup of heavy cream. This one is important. This is what makes it creamy. If you use half and half, you will get ice crystals. Small crunchy ice. I tried it during lockdown. Never again.
Half teaspoon of vanilla. Any vanilla is fine. Chocolate is strong so it will cover the cheap ones.
And salt. Small pinch. If you forget salt, your ice cream will taste flat. Like something is missing. That something is salt.

Mixing.
Get a bowl. Pour milk and sugar. Whisk until you don’t see sugar again. One minute or two.
Then add your cocoa. This is where people get tired. Cocoa clumps. You’ll see small brown balls. Keep whisking. Keep whisking. Keep whisking until it’s smooth. Your hand will hurt. Too bad.
When it’s smooth, add your cream, your vanilla, your salt. Stir gently.
Now taste it. If it tastes bad now, it will taste bad as ice cream. Fix it. Add more sugar if you want. Add more cocoa if you want. Taste again.

Now machine.
Take your frozen mug from freezer. Put on flat surface. Not on towel. Not on wet counter.
Attach motor to lid. Push until click. Push paddle into motor. Put lid on mug. Turn to lock.
Plug in. Turn on.
Now pour your mixture through that small hole while machine is running. Slow. Let it freeze as it goes in.
Then wait.
After twenty minutes, check. It should be thick like soft serve. If it’s still liquid, give it ten more minutes.
If you want to add chocolate chips or crushed cookies, put them in during last five minutes. Not at beginning. They will just sink.

Now this part nobody tells you.
When it’s done, the paddle will be stuck inside the ice cream. Don’t panic.
Turn off machine. Unlock lid. Lift. The paddle will come out with ice cream on it. Eat that first. That is your reward as the cook.
Then eat the rest from the mug. Don’t pour into another bowl. Why washing extra plate?

Problems.
If you see ice crystals – your milk was too warm or your mug wasn’t frozen enough. Still eat it. Just know for next time.
If it tastes like nothing – you forgot salt. Stir small pinch with spoon after churning.
If it’s still liquid after thirty minutes – your freezer is not cold enough. Pour into plastic cup. Freeze for three hours. Call it frozen mousse.
If it’s too hard after freezing – leave on counter for eight minutes. Not microwave. Never microwave. I will know.

Cleaning.
Wash everything with warm soapy water right after eating. Don’t let it sit. Don’t put in dishwasher. Hand wash only. The heat from dishwasher will ruin the plastic.
Keep the motor dry. Don’t put it in water. Just wipe with wet cloth.
Dry everything before storing.

Storage.
Best to eat everything at once. That’s why the mug is small. Make what you will eat.
If you have leftovers – cover with plastic wrap. Freeze up to one week. After one week, ice crystals will win. Throw it away.

Last thing.
This recipe is not special. There’s no secret. It’s just frozen mug and basic things from your kitchen.
But my children stopped asking me to buy ice cream after the first week. Not because mine is better than the shop. But because they saw it happen. They saw milk and brown powder turn into ice cream right there on my counter.
Try it. If it doesn’t work, your mug wasn’t cold enough. Freeze it longer. Try again.
