He took me through it step by step He showed me how to cook the noodles for less time How to rinse them with cold water until they stopped cooking How to dry them so the dressing would stick How to add the dressing gradually so the noodles would not drown
I practiced that night until I got it right My kitchen was a mess Noodles everywhere But by morning I could make this dish in my sleep
That party in Lekki was a success The cold noodle salad was the star Everyone was asking for the recipe The client paid me extra and said Chef this is the best thing I have tasted in a long time
From that day this dish became my signature starter I have made it for over 300 events now I have made it when the power was out I have made it when I had no gas I have made it when my assistant ruined the noodles and I had to start over

What Is This Dish Really About
In Nigeria we do not traditionally eat cold food Everything is hot Hot stew Hot soup Hot rice So when I first started serving this at events people were confused They would look at the plate and say Chef is this food cold Why is it cold

Rice Noodles
These are my favorites They are light They are springy They do not get heavy when they are cold Rice noodles are made from rice flour and water No eggs No wheat That is why they stay light even when chilled
The thin ones work best The ones that look like vermicelli or angel hair pasta They cook quickly They absorb dressing well When they are cold they still have a nice bite Not rubbery Not mushy Just springy
I buy mine from the Asian market in Surulere There is a small shop there that sells all kinds of noodles The owner is Chinese and she knows her stuff She told me once that some rice noodles need soaking not boiling So always read the package Do not assume
Spaghetti
If you cannot find rice noodles use thin spaghetti The regular spaghetti is too heavy The thin one cooks faster and does not feel like you are chewing rope
I have used spaghetti many times when I ran out of rice noodles It works It is not the same but it works If you are serving this to people who know noodles they will notice But most people will not complain
Soba Noodles
These are Japanese noodles made from buckwheat They have a nutty flavor and a brownish color They are healthy Buckwheat is good for you But they are expensive and they are tricky Overcook them by one minute and they become mush
I use soba when I have a health-conscious client Someone watching their carbs Soba has a lower glycemic index than rice noodles But honestly I prefer rice noodles They are more forgiving
Egg Noodles
Do not use these I made this mistake once and I regretted it Egg noodles are soft when hot But when cold they become chewy and sticky They clump together They do not absorb dressing
I had a client who insisted on egg noodles I told her I do not recommend it But she insisted So I made it her way She took one bite and said Chef these noodles are like rubber I said I told you ma She laughed and said next time I will listen to you
Udon Noodles
These are thick Japanese noodles They are good in hot soup But cold No When you chill udon they become rubbery and chewy Like you are eating tire I tried it once for an event and a customer sent it back She said Chef Oge this noodle is too thick I agreed with her and took udon off my menu
The Vegetables Fresh Is the Only Way
You cannot use old vegetables for this dish They must be fresh and crisp I go to the market early in the morning to get mine By afternoon they have lost their crunch
Cabbage
I use green cabbage It is cheaper and it stays crunchy longer Purple cabbage looks nice but it stains everything pink If you are serving guests think about presentation Nobody wants pink noodles
The cabbage must be shredded finely Not chopped I use a mandoline in my kitchen If you do not have one use a grater Big chunks of cabbage ruin the texture
I remember my assistant Blessing chopped the cabbage with a knife Big thick chunks She said Chef it is the same thing I said Blessing if you ever do that again I will make you eat the whole bowl The cabbage needs to be thin so it absorbs the dressing Big chunks stay hard and crunchy
Carrot
You need to cut the carrot into thin matchsticks Not cubes Not rounds Matchsticks Why Because the carrot needs to absorb the dressing The vinegar softens it slightly and the flavors meld If the pieces are too thick they stay hard
I cut my carrots to the thickness of my pinky finger That is the perfect size
Cucumber
This is where people mess up The cucumber has watery seeds in the middle If you do not remove them they release water into your salad and ruin everything
I cut the cucumber in half lengthwise Then I scoop out the seeds with a small spoon Then I slice it into thin half moons
Some people argue the seeds are fine I disagree I have had too many salads ruined by watery cucumbers Remove the seeds Trust me
Green Onions
I use both parts The white part is sharper The green part is milder Your salad needs both I chop the white part and mix it in The green part I sprinkle on top for garnish
Fresh Herbs
Cilantro and mint are optional but I recommend them They add freshness If you hate cilantro use mint or basil Just use something fresh Dried herbs are useless here
The Dressing Getting It Right
I have experimented with this dressing for years I have tried different ratios different ingredients This is the one I keep coming back to
My Basic Dressing
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon honey
Half teaspoon chili flakes
That is it Soy sauce gives saltiness Sesame oil gives nuttiness Vinegar gives tang Honey gives sweetness Chili gives heat
How to Adjust
Taste the dressing before it touches the noodles Taste it by itself If it is too salty add water If it is too sour add more honey If it is not spicy add more chili If it is too thick add water
The dressing should be balanced You should not taste any one ingredient too strongly
Adding Ginger and Garlic
Sometimes I add minced ginger and garlic About half a teaspoon each It gives deeper flavor But this is optional I only do it for big batches For family meals keep it simple
Using Citrus
Sometimes I replace rice vinegar with lime juice The flavor is brighter and more refreshing I do this in summer when I want the salad to feel even lighter Lime juice is stronger so use less Start with half a tablespoon
The Protein Options
Grilled Chicken
This is the most popular I marinate chicken in soy sauce garlic and ginger Let it sit for two hours Then grill until cooked Slice thin and place on top The warm chicken with cold noodles is a beautiful contrast
Shrimp
Shrimp works but be careful Overcooked shrimp is rubbery I peel mine season with salt and chili and cook two minutes per side That is it Medium shrimp work best
Tofu
I use this for vegetarians The most important step is pressing the water out Wrap tofu in a towel put something heavy on top and let it sit for thirty minutes Wet tofu is terrible It does not absorb dressing
After pressing I cube and pan-fry until golden Then toss with soy sauce and chili
Boiled Eggs
Sometimes I add boiled eggs Cut in half and place on top They add richness
Cooking the Noodles Step by Step
This is the most important part Get this right and everything else is easy
Step One Prepare the Water
Fill a large pot with water Add salt about one tablespoon Add one teaspoon of vegetable oil The oil stops the noodles from sticking
Put the pot on high heat Wait for a rolling boil Big bubbles constantly moving
Step Two Add the Noodles
When water is boiling add noodles Stir immediately with a spoon or chopsticks This stops them from sticking to the bottom
Step Three Cook for Less Time
Set a timer for two minutes less than the package says Manufacturers always recommend overcooking I do not know why Take one noodle out and taste It should have a slight bite in the middle If it is soft and mushy you have gone too far
Step Four Rinse With Cold Water
Pour noodles into a colander Immediately run cold water over them Use the coldest water you can get Add ice if you have it Stir with your hand while water runs This stops cooking and removes starch Starch makes noodles sticky
Step Five Dry the Noodles
This is the step everyone skips Shake the colander hard Get as much water out as possible Then spread noodles on a clean kitchen towel or baking sheet Let them sit for five to ten minutes to air dry
If noodles are wet the dressing slides right off You get bland noodles and a puddle of sauce at the bottom Take the time to dry them

Mushy Noodles

Watery Salad
