Because the version wey dem sell for supermarket don spoil people mind

Dem think say teriyaki na one-dimensional sweet thing

I cook am different

For Oge’s Kitchen we do am the way wey go make sense for our people

We keep the authentic technique but we add our own touch

Small garlic

WHY THIS DISH DEY WORK FOR EVENTS

I remember one event wey we cater

Birthday party for one woman wey be fitness instructor

The kind wey dey count every calorie

She come to the buffet

She look the food

She tell me “Oga I no fit eat o, I dey watch my weight”

I tell her “Madam just try this chicken small”

She say “But e get sugar”

I say “E get sugar but e no too sweet, and e no heavy, just try one piece”

She try am

One piece

Then she take another

Then another

Before I know wetin dey happen she don clear the whole plate

She come back to the kitchen

Not the buffet o

The kitchen

To ask me wetin I put inside

She say she feel full but she still feel light

Like she fit go and exercise after the party

That day I know say this dish dey work

WETIN YOU GO NEED

Let me tell you the ingredients

But before that

Let me tell you about chicken

Because this chicken matter na serious thing

The Chicken

Many people dey use breast

Breast dey dry

E no get enough fat

By the time you cook am the outside fit brown but the inside go still be dry like gari wey no get water

Me

I use thighs

Always

No matter wetin anybody talk

Thighs get fat

Fat keep the meat moist

Even if you overcook am by one minute e no go punish you

Breast

Overcook by thirty seconds and you go don turn am to shoe leather

I remember one time I run out of thighs for an event

The market wey I usually buy from don close

I use breast as last resort

The chicken came out okay but I knew

The texture no be the same

From that day I make sure I always stock enough thighs

So get

2 pounds of chicken thighs

Boneless

Skinless

The Marinade

Simple things

4 teaspoons soy sauce

Half teaspoon sesame oil

Half teaspoon salt

Quarter teaspoon black pepper

The Sauce

This one na where the magic dey

But e no need to be complicated

You need

One third cup soy sauce

Half cup honey or brown sugar

One tablespoon rice vinegar

One tablespoon mirin

One tablespoon sake

One teaspoon minced garlic

Half teaspoon minced ginger

Half teaspoon sesame oil

Three quarter cup water

Two tablespoons cornstarch mixed with quarter cup water

But let me tell you something

The authentic Japanese teriyaki no get garlic and ginger

E just get soy sauce, mirin, sake, and sugar

That’s it

Four ingredients

But we Nigerians like flavor

We like things wey dey punch

So I add garlic and ginger to give the sauce more depth

Is it traditional

No

But e taste better for our palate

And at the end of the day we dey cook for Nigerians, not for Japanese people

Now about cornstarch

The authentic version no use cornstarch at all

Dem just reduce the sauce until e thicken naturally

This takes about 5 to 8 minutes of simmering

But when you dey cook for 200 people you no get time to stand and reduce sauce for 30 minutes

So we use cornstarch sometimes

Just a little bit to speed up the thickening

If you dey cook for your family try the reduction method

The Garnish

Green onions

Sliced thin

Sesame seeds

HOW I DO AM

Okay

Let me walk you through the process

The way I go show my assistant when e dey learn

Step 1: Prep the Chicken

First

Pat the chicken dry

I mean really dry

Use paper towels

Press am well well

If your chicken dey wet e no go brown

The water go turn to steam and you go end up with boiled chicken

And boiled chicken no get that beautiful brown crust wey make teriyaki special

After you dry am

Prick the chicken all over with a fork

Just stab am well well

This helps the marinade enter the meat

Some people skip this step but I no understand why

Because e dey make the flavor penetrate deeper

Now mix your marinade

Soy sauce

Sesame oil

Salt

Pepper

Add the chicken and massage am with your hands

Get in there

Make sure every piece dey coated

Let this sit for about 15 to 30 minutes

If you dey cook for a big event you can marinate for up to 2 hours

Some caterers even marinate overnight

But be careful o

If you marinate for too long

More than 12 hours

The soy sauce go make the chicken too salty and the texture go become mushy

I made this mistake before

Left the chicken for 24 hours because I forgot about am

The texture was weird

Not terrible but not right

The chicken don start to break down from the salt

Step 2: Make the Sauce

While the chicken dey marinate you need to make the sauce

Mix all the sauce ingredients together

Whisk am well

Make sure the sugar dissolves completely

Taste am

If e too salty add more mirin

If e too sweet add more soy sauce

Find the balance

If you’re using cornstarch

Mix am with cold water until smooth

No lumps

Make sure the water dey cold

Hot water go make the cornstarch clump

Step 3: Cook the Chicken

Now this part na where the skill come in

Heat your pan or wok over high heat

Add vegetable oil

Wait for the oil to get hot

You go see slight smoke

That’s when you know the pan dey ready

Add the chicken in a single layer

And I mean single layer

Don’t overcrowd the pan

If you put too much chicken the temperature go drop and the chicken go start to steam instead of brown

Let the chicken cook without touching am for about 3 minutes

Just leave am

When the chicken releases from the pan easily that’s when you know e dey ready to flip

If e dey stick e no dey ready

Flip and cook for another 2 to 3 minutes

For thighs cook a bit longer

About 4 minutes per side

Thighs dey denser than breast

Remove the chicken from the pan and set aside

Step 4: Make the Sauce

Now using the same pan

Don’t wash am o

All those brown bits wey remain from the chicken dey add flavor

That’s what chefs call fond

E be flavor gold

Pour the sauce mixture into the pan

Heat over high heat until e start to simmer

Let it cook for about 1 minute so the alcohol from the sake and mirin can evaporate

If you’re using cornstarch add am while stirring continuously

Don’t stop stirring

If you stop the cornstarch go clump and you go get lumps in your sauce

Keep stirring until the sauce thickens

This usually takes about 60 seconds

Remember the sauce will thicken more as it cools

So stop slightly before e reach the consistency you want

Step 5: Combine Everything

Return the chicken to the pan

Toss am in the sauce to coat evenly

And here’s my secret

Spoon the sauce over the chicken repeatedly while e dey simmer

Don’t just add the sauce and walk away

Keep spooning

This builds layers of flavor and gives the chicken that beautiful shine

In my kitchen we call this “painting the chicken”

Let the chicken rest for about 2 minutes before slicing

This allows the juices to redistribute

If you cut immediately the juice go run out and your chicken go be dry

Step 6: Garnish and Serve

Transfer to a serving plate

Drizzle any remaining sauce over the top

Garnish with sliced green onions

And toasted sesame seeds

Serve immediately while the chicken dey hot and the glaze dey shiny

Things wey no dey for any recipe book

The Heat Matter

Many people dey scared of high heat

Dem think say e go burn the chicken

But the secret to juicy teriyaki chicken is cooking it hot and fast

High heat sears the outside and locks in the juices while the inside cooks through without drying out

But when you add the sauce reduce the heat to medium

The sugar in the sauce burn easily

If the heat dey too high the sugar will burn before the sauce thickens and you’ll get a bitter taste

I don see people ruin whole batches of chicken this way

The sauce turn black and bitter

The whole thing go waste

The Glaze Matter

The shine on the chicken no be accident

E come from technique

You need to brown the chicken properly before adding sauce

You need to add the sauce at the end not the beginning

You need to spoon the sauce over the chicken repeatedly

The glaze is what makes people say “this one look like restaurant food”

Without the glaze e just be chicken with sauce

The Freezing Matter

If you dey prep for a future event cook the chicken without the sauce

Let it cool completely

Freeze the chicken and the sauce separately

When you’re ready to serve thaw both

Reheat the chicken in the sauce

And the glaze will be fresh and shiny

If you freeze the chicken with the sauce already on am the sauce will become watery when you defrost and the texture will be off

I made this mistake before

The sauce separated and the chicken was soggy

The Substitution Matter

Sometimes you no fit find all the ingredients

Here’s what I do

No mirin

Use a mixture of sake and sugar

No sake

Use dry white wine or even apple juice in a pinch

Need gluten-free

Use coconut aminos or gluten-free tamari

Too sweet

Reduce the sugar

Want a thinner sauce for meal prep

Reduce the cornstarch

PROBLEMS I’VE SEEN

I don cook this dish so many times I don see every problem wey fit happen

Sauce Tastes Bitter

The heat was too high and the sugar burned

Just start over

Don’t try to salvage am

The bitter taste go ruin everything

Sauce Too Thick

You reduced am too long or used too much cornstarch

Don’t use cold water because the sauce fit seize up

Chicken Dry

You used breast and overcooked am

Next time use thighs

If you must use breast cook to 165°F and no more

Let it rest before slicing

Sauce Watery

You didn’t reduce the sauce enough

Let it simmer longer to evaporate the water

Chicken Not Shiny

You added the sauce too early

The chicken needs to be properly browned before the sauce goes in

Sauce Tastes Flat

The balance of sweet, salty, and savory is off

Add a splash of mirin to enhance the sweetness and depth

HOW I SERVE THIS DISH

With Rice
