The Day I Almost Failed With This Pie

Even with a simple recipe like this I have had my share of disasters and failures

I remember one time I was making this pie for a dinner party with good friends

I was in a rush and I did not let the cream cheese soften properly at all

I just threw it in the mixer straight from the fridge like a complete fool

Now Let Me Show You How I Do It

The Crust

I start with the crust because it needs time to set in the freezer

And I want it to be firm and ready when the filling is finally done

I take 1 and a half cups of graham cracker crumbs for the base

You can buy them already crushed or crush them yourself at home

I usually crush them myself because I like the texture better that way

I put them in a bowl and I add a third of a cup of granulated sugar

I pour 1 and a half cups of heavy cream into the cold bowl

I add 2 tablespoons of powdered sugar to sweeten it slightly

And I start beating on medium high speed until it thickens

It takes about 3 to 4 minutes to get stiff peaks that stand up

You will know it is ready when you lift the beaters up high

And the cream stands up in firm peaks that do not flop over

Be careful not to overbeat because it can turn into butter

Nobody wants butter instead of whipped cream in this pie

Once the cream is whipped I put it in the fridge to stay cold

The Peanut Butter Filling

Now I move on to the filling and this is where the magic happens

I take my cream cheese out of the fridge early before I start

At least 45 minutes before I begin making the filling

This is so it softens to room temperature and becomes smooth

If the cream cheese is cold it will not blend smoothly at all

And you will end up with lumps in your filling that you cannot fix

I put the softened cream cheese in a large mixing bowl

And I beat it on medium speed until it is completely smooth

This takes about 2 minutes and I scrape down the sides as needed

I want it to be lump free and silky and ready for the other ingredients

Next I add 1 cup of creamy peanut butter to the bowl

And this is where I make a point and I want you to listen

I use a commercial brand like Jif or Skippy for this recipe

I do not use natural peanut butter for this recipe at all

Natural peanut butter has too much oil and it makes the filling unstable

The pie will not set properly and it will be soft and runny

So stick with the regular creamy peanut butter that is consistent

I also add 1 cup of powdered sugar that I have sifted first

Sifting removes any lumps so the filling is perfectly smooth

And I add 1 teaspoon of pure vanilla extract for flavor

I beat everything together on medium speed until it is combined

It takes about 2 to 3 minutes to get thick and smooth and glossy

The mixture will look dense and slightly shiny at this point

This is the perfect time to taste it and see what you think

You can adjust the sweetness if you want to your taste

Add a little more powdered sugar if you like it sweeter

But remember the whipped cream will also add sweetness later

So do not overdo it or it will be too sweet in the end

Folding Everything Together

Now comes the delicate part and you need to be gentle

I take the whipped cream out of the fridge where it has been waiting

And I add it to the peanut butter mixture in two additions

I use a large rubber spatula and I fold it in gently

Slow sweeping motions from the bottom of the bowl upward

I do not stir vigorously because that will deflate the whipped cream

I want to preserve as much of that airy volume as possible

The finished filling should be light and fluffy and mousse like

This folding step is what separates a good pie from a great one

Take your time and be gentle and you will be rewarded

When everything is combined and there are no streaks of white

The filling is ready and it looks beautiful and inviting

Assembling The Pie

I take the crust out of the freezer where it has been setting

It should be firm and cold and ready for the filling

I spoon the peanut butter filling into the crust carefully

And I spread it evenly with an offset spatula or spoon

I smooth the top into a clean level surface that looks nice

If I want to be fancy I make gentle swirls on top with the spatula

It looks beautiful and it is so easy to do with just a little effort

Now I cover the pie loosely with plastic wrap so it does not dry out

And I put it in the refrigerator to chill and set and firm up

It needs to chill for at least 4 hours to set properly

But overnight is strongly preferred and much better

The longer it chills the firmer the filling gets and holds

And the flavors meld together beautifully over time

When I am ready to serve I add some toppings for decoration

A dollop of whipped cream on each slice if I have extra

A sprinkle of chopped honey roasted peanuts for crunch

A drizzle of chocolate sauce if I am feeling extra indulgent
