I do not use natural peanut butter for this recipe at all
Natural peanut butter has too much oil and it makes the filling unstable
The pie will not set properly and it will be soft and runny
So stick with the regular creamy peanut butter that is consistent
I also add 1 cup of powdered sugar that I have sifted first
Sifting removes any lumps so the filling is perfectly smooth
And I add 1 teaspoon of pure vanilla extract for flavor
I beat everything together on medium speed until it is combined
It takes about 2 to 3 minutes to get thick and smooth and glossy
The mixture will look dense and slightly shiny at this point
This is the perfect time to taste it and see what you think
You can adjust the sweetness if you want to your taste
Add a little more powdered sugar if you like it sweeter
But remember the whipped cream will also add sweetness later
